My family loves green beans. When I blanch and refrigerate them, the kids nosh on them for a snack. Especially with homemade hummus.

I love this recipe because I can blanch the beans in advance, and as long as the kids don’t gobble them up, I can start with Step Two 15-20 minutes before dinner is served. This is a super easy and tasty way to prepare green beans. And they always receive compliments!

Ingredients

2 lbs. Green Beans, washed and trimmed
2-3 cloves Garlic
1 Red Onion, sliced thin
Grapeseed oil
Soy Sauce (Bragg’s Amino Acids)
Preparation Instructions

STEP ONE:
Blanch beans, then shock in ice bath to stop the cooking process. Drain and dry.

STEP TWO:
Heat oil over medium-low heat in frying pan. Add onion. Cook for 5 minutes, add beans and garlic. Sautee over medium heat for 10-15 minutes. Serve with sliced almonds sprinkled on top (optional).
