Impressive Stuffed Pinwheel

Friday nights are family nights. Typically, we eat something tasty, watch a movie or play a game. Rarely do we go out. We are just too exhausted from running around all week between school, work and activities. We settle into our home and enjoy each other. Tonight, I’m excited to “wow” them with this ingenious and delectable Italian Pinwheel recipe. Next time you want to impress your family or guests, try this recipe. It is tasty, creative and still maintains healthy options! And don’t forget to change up the ingredients. Include the things you like, disregard the ones you don’t and feel free to add something that’s not even on the list!

Ingredients
2 lb. grass fed ground beef
2 eggs
1 cup oats, ground
1/2 medium onion, minced (about 1/3 cup)
1/4 cup parsley, minced Salt & Pepper
*1 cup marinara
*1 Tbls dried oregano
STUFF WITH:
*1 cup spinach leaves
*1/2 cup basil leaves
*1/2 cup sun dried tomatoes
*1/2 parmesan cheese, shaved or grated
*1 1/2 cups mozzarella, chunked
*1/2 cup ricotta cheese
Instructions

STEP ONE:
Once all the meatloaf ingredients are mixed together, line a flat cookie sheet with wax paper. Place the meatloaf mixture on top. Add a top layer of wax paper and roll the mixture even with a rolling pin. (If you don’t have a rolling pin, use a cup or glass.)

STEP TWO:
Time to stuff it. Layer all the ingredients and roll the mixture into a pinwheel using the wax paper ... kind of like a sushi roll! Seal the ends of the pinwheel by pinching the ends together.

STEP THREE:
Bake in a preheated 350 degree oven for 25-35 minutes. Let rest for 10 minutes. Slice. Serve on top of a swirl of marinara. Impress.

OTHER SUGGESTIONS:
Make it Mexican Style by replacing the ingredients that have a (*) with the following:

1. To the meatloaf mix, add: 1 cup crushed tomatoes,1 Tbls chili powder, 1 tsp cumin
2. Stuff with: 1 cup monterey jack cheese, shredded,  1 cup black beans (dried on a paper towel),  1/2 cup corn,  1/2 cup red pepper, chopped fine
