When you're out and about, grabbing something from a drive-thru is tempting. This is a no-excuse, fast recipe you can make while you're getting ready for your day. It travels well in a glass jar with fitted lid. Place in an insulated lunch box or cooler and bring it with you on your day of errands or to work. Don't forget a mug to sip it from. Ingredients

2 cups water 
1/2 to 1 cup onion, chopped  - about half of a large onion
1 cup red lentils, rinsed
Salt and pepper
Curry, to taste. 3-4 tsp.
1 can coconut milk (international food aisle)
Preparation Instructions

STEP ONE:
Start by getting the water on the stove to boil. Chop onions, rinse lentils and add to boiling water. Season with salt, pepper and curry. Bring to a boil, reduce heat and cover.

STEP TWO:
Set your timer for 15 minutes. Add coconut milk then puree in blender or immersion blender. 

STEP THREE:
Taste, reseason, serve.
