GREEK SALAD
Preserving the awesome flavor of the Greek salad, while keeping it simple and affordable isn't always easy. This version of the classic greek salad keeps it simple, easy and transportable. Fresh ingredients are the key with a few alternates to keep it simple and delicious, this salad is a fan favorite.
Ingredients
Prepared Chicken - cubed or shredded - a full layer
Garbanzno beans - a full layer
2 Tbls. Feta cheese
1 Tbls. Red onion, chopped
2 Tbls. Green pepper, chopped
3 Tbls. Olive Oil
The juice of 1 Lemon, about 1-2 Tbls.
1 tsp. dried Oregano
3 Tbls Tomato, chopped
1 -2 Tbls Parsley, chopped
Fill the rest of the jar with chopped Romaine Lettuce

STEP ONE:
Slice and chop ingredients.
STEP TWO:
Layer them in the jar in the order the ingredients are listed.
STEP THREE:
Make sure the dressing (oil/lemon) is added before the tomato, parsley and romaine.
OPTION: Add boiled potatoes on the bottom layer with the chicken.
FENNEL SALAD
Fennel tastes a little bit like licorice. It is crisp and adds a nice crutch to the bite of the salad. Combined with the Honey Lime Dressing it creates just the snap this salad needs.
Ingredients
Fennel, just the whites, sliced thin
Orange
Slivered almonds, raw
Gorgonzola
Honey Lime Dressing
Spring Mix

STEP ONE:
Slice and chop ingredients.
STEP TWO:
Start with a wide-mouth mason jar, sterilized. Using a funnel, layer ingredients in the jar in the order they are listed with enough to cover one layer. Add the dressing before you add the romaine lettuce.
STEP THREE:
Seal with a tight fitting lid. Refrigerate.
STEP FOUR:
Devour within 4 days. When you’re ready to eat, turn jar upside down over a plate and let the ingredients spill out on your plate.
NOTE: substitute chicken with turkey, or cannellini beans to keep it vegetarian.
CALIFORNIA SALAD
We're not sure if people from California are cool and that is why this salad is cool, or maybe it is the fresh fruit this salad includes. It really doesn't matter because this salad "Plays No Games" when it comes to flavor. Try it, I have no doubt you will agree...and you won't need to move to Cali either.

5 oz Grilled or Broiled Chicken cut in cubes
4 oz Granny Smith Apples, chunked in bite sized pieces
4 oz Grapes
1/4 cup Feta
2 Tbls Red Onion
3 Tbls minced Almonds, raw and slivered
Honey Lime Dressing
Romaine lettuce

SOUTHWEST SALAD
Fresh. Flavorful. Fun. It’s like a jar full of garden confetti. So many colors equals so many flavors. You can easily use leftovers to create this masterpiece!
Ingredients
5 oz Grilled Chicken cut in cubes
Black beans - a full layer
Corn
2 Tbls Olive Oil
1 Tbls Lime, freshly squeezed
SnP (salt and pepper)
Chili powder, just a dash or two
Cheddar Cheese, shredded or cubed
Tomato
Cilantro
Romaine lettuce
Preparation Instructions
STEP ONE:
Chop up all the ingredients.
STEP TWO:
Layer them in the jar in the order they are listed.
STEP THREE:
Make sure the dressing (oil/lime) is added before the tomato, cilantro and romaine.
NOTE: Avocado is excellent on this salad, however, it does not stay green very long. Just an idea - bring a fresh, uncut avocado with you to work.
These Salads helped me Break the Bread... habit!
Everyday I was challenged to eat something on bread or a tortilla or some other form of flour in the many varieties offered out there in Lunch Land! Try as I might how was I supposed to remove bread from my diet this way? These salads made it so I could prepare ahead of time (Sunday Night!) and keep up the same great whole food eating each day without the bread. My body responded quickly to the removal of bread.... I felt better, healed better, no longer craved the breads & began to shrink due the the removal of what was causing inflammation in my body due to the constant influx of the bread ingredients!
